I never knew how tasty beets were until I started roasting them. This is a very simple recipe, and the best part is you can eat it cold (which means a simple make-ahead dish!).
Recipe:
- Beets, washed (and peeled if you want, but I didn’t for these) and sliced.
- Balsamic vinegar (I used a fig-vanilla balsamic)
- Olive oil
- Crumbled Goat Cheese
- Fresh mint leaves
In a bowl, mixe together olive oil and balsamic (about 50/50, I don’t know how much exactly, just enough to coat the beets). Put them on a layer of tin-foil in a pan into a pre-heated oven (to 400 degrees Fahrenheit) and bake for 35-ish minutes. Remove them and let cool.
Then, put the beets on a plate and sprinkle goat cheese and mint over them, and also drizzle a little bit more balsamic on top. Then, eat and smile!

Another surprisingly good roasted veggie is (are?) radishes. The very large ones might make an interesting alternative to this recipe, but they do very nicely by themselves.
